BBQ Duck / Oven Roasted Duck
Ingredients and Seasoning:
Whole Duck
6 tbsp Light Soy Sauce
2 tbsp Shaoxing White Wine
(don't know how this wine looks like? please refer to my other recipe post: BBQ Pork)
2 pieces Anise (break it into small pieces)
Pinch Ground Cinnamon
Pinch Rock Suger (melt)
8 pieces Green Onion
8 slices Ginger
Steps:
1) Mix well all ingredients except green onion and ginger. Prepare to use later.
2) Prepare the whole duck, rinse it, dry it with kitchen paper towel. Spread the salt around the whole duck and let it sit for around 15-30 minutes.
3) Place the green onion and ginger inside the duck.
4) Spoon the seasoning from step (1) over the duck. Marinate the duck for overnight is much better, if not, it should be marinated at least 2 hours before baking.
5) Next day before baking, prepare the baking tray with rack, move the duck to the baking tray and let it sit for a while at room temperature.
6) Preheat the oven at 350F and bake it for 30 minutes.
7) During the first 30 minutes baking, we have to prepare 'Crispy Water' for spooning over the duck to make its skin crispy.
Crispy Water = Honey + White Vinegar
8) Take the duck out from the oven, wrap the wings and legs with aluminium foil. The reason I do that is the wings and legs are easily get burned or over cooked when it keeps baking. Right now, the duck is not fully cooked yet.
9) Brush the 'Crispy Water', that we made from step (7) over the duck.
10) Bake the duck for another 30 minutes at 350F, brush the Crispy Water in every 10-15 minutes, that means 2-3 times. (Baking time varies depends on the size of the duck)
11) It's nearly done. Finally, make sure the duck is fully cooked and it should look like shiny and crispy.
12) Looking delicious, right?
13) Time to enjoy this BBQ Crispy Duck!!! You can dip it with Lee Kum Kee (brand) Hoisin Sauce.
